It's National Dog Day ~ Meet Moses & Jacob

Today is National Dog Day.  In honor of this occasion, I am reposting about our two newest furfriends...originally posted January 31, 2012. 



We are now the new "people" for these two guys!  If you saw my previous post, Goin' To The Dogs you already know that a friend of a friend of mine was trying to find a home for Jacob after his owner became too sick to care for them.  She didn't say much about Moses, thinking no one would take such an old dog.

We met them on Saturday and it was instant love.  Of course we could not just take one and leave the other!  No way that was going to happen!  At the time we visited them, they literally had the run of the house, with a dog door to go in and out.  It was quite a mess.  The friend had been going out once a day to feed them, and the rest of the time they were on their own.

We agreed to take them in right then.  They hopped right in the car and rode quietly all the way to our house.  I made a mad dash for Pet Smart, spent a bundle and came home with collars, leashes, beds, dog dishes, toys, treats, etc.  Monday I called our veterinarian and made an appointment to get their shots updated.  Fortunately they had been to the same vet, so they have records, although limited.  We now know Jacob is 8 years old and Moses is 12 years.

In the last two days they are settling in and getting adjusted to our rules.  They are so good, very smart, and loving to the max!  They want to be right with us, following us from room to room, sleeping at our feet, and watching our every move.  Whenever I sit down at my computer, they are right here with me till I get up and go in another room.  Moses whines when I leave the house.  And, the best part is that our dog sitter can't wait to meet them and spoil them rotten!

Too Many Books ~ What To Do? (& Big Event Coming Soon!)

Perhaps I have mentioned this before, but HB (HoneyBunny) is a Hoarder  - uhhh...packrat.  He loves books.  He need/wants to be surrounded by books.  He reads lots of books.  He owns lots of books.  Too many books.  To be clear, I love books, too, but I can pass them on to others to enjoy, just keeping some I may want to read again sometime.

We have book shelves filled to capacity in almost every room.  We have tubs of books stored in our storage sheds (yes, plural!) and storage units we pay for!  More than the two of us together can read in what's left of our lifetimes.  More than our house can hold. 

Some of the books are being sorted and given away - cautiously - a few at a time.  More are being packed away.  So, the big, huge question is, what do we do with all of  them so those TV folks don't come knocking on our door asking to film us for the next season of Hoarders, Buried Alive!  (chuckle)

I may have stumbled on the perfect solution - if we only had the room!  Look what I pinned to my Pinterest today!  I first saw this photo on My Zero Waste - a great blog you should check out!

What an imagination this guy has!  I love it and when I show it to HB I am sure he will try to figure out a way to make one!  I may have opened a can of worms here!

Slow Cooker Recipes from Pinterest

It's the weekend...and, in Arizona, likely a wet one.  So, here are some yummy recipes from Pinterest (All You Magazine) for your slow cooker to make life easier!

Apricot Chicken

  • 12 dried apricots
  • 8 medium chicken thighs (about 2 1/2 lb.) $

  • Salt and pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil $

  • 1 onion, sliced $

  • 1 cup chicken broth


  1. Rinse apricots and scatter them in a slow cooker. Pat chicken dry; season with salt and pepper. Melt butter in oil in a large skillet over medium-high heat. Cook thighs until golden brown, 3 to 5 minutes per side. (Brown in batches to avoid crowding skillet.) Arrange over apricots.
  2. Pour off all but 1 Tbsp. fat in skillet. Add onion and cook until just soft, 2 to 4 minutes.
  3. Add broth to skillet; turn heat to high. Bring to a boil, loosening browned bits.
  4. Pour contents of skillet over apricots and chicken. Cover and cook on low heat for 4 hours.
  5. Carefully transfer thighs to a serving dish (they'll tend to fall apart easily); cover with foil to keep warm. Pour remaining contents into a saucepan. Boil, stirring often, until reduced and thickened, about 10 minutes. Pour over chicken.

Shredded Beef Tacos

  • 1 teaspoon salt
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 2 pounds top round roast
  • 1 tablespoon olive oil $

  • 1 8-oz. can tomato sauce
  • 1/2 chipotle chile in adobo sauce, seeded and finely chopped
  • 4 cloves garlic, finely chopped
  • 12 corn tortillas


  1. 1. Combine salt, chili powder, cumin and coriander; rub all over roast. Warm oil in a large heavy pot over medium-high heat. Sear meat on both sides, about 4 minutes total.
  2. 2. Place meat in slow cooker. Mix tomato sauce, chipotle and garlic; pour over meat. Cover and cook on low until fork-tender, about 6 hours. Shred meat, combine with enough sauce to moisten, and serve with tortillas.

1 (3 lb.) boneless pork shoulder, skin and excess fat removed $
1 onion, chopped $
1/2 cup low-sodium chicken broth or water
2 cups bottled or homemade barbecue sauce $
2 tablespoons mustard $
2 tablespoons honey
1 tablespoon soy sauce
Salt and pepper

Trim pork of any excess fat. Scatter onion over bottom of slow cooker and place pork on top. Add broth, cover and cook on low until very tender, about 8 hours. Remove meat and let cool.
When cool enough to handle, pull meat into thin shreds, removing all fat and gristle. Skim excess fat from liquid in slow cooker.
Return pulled pork to slow cooker and stir in barbecue sauce, mustard, honey and soy sauce. Season with salt and pepper. Cook for 1 hour longer on low. If desired, serve with hamburger buns and sides of pinto beans, corn, tomatoes and coleslaw.

Doctors, Hospitals, Tests, Labs & Still No Answers

You may not even know I have been absent for awhile, but I sure did miss all of you! I have been away from my computer for almost two weeks due to health issues, lack of energy, and fatigue. 

For the past few weeks I have been on quite an adventure (sarcasm intended) as many doctors and two hospitals poked, prodded, scanned and xrayed me from (almost) top to bottom!  I have been short of breath with some chest discomfort, dizziness and major fatigue.  In other words, I feel like a wind up doll who is on her last wind.  Pooped...worn out...exhausted...and unable to walk across the room without huffing and puffing.

The answer seems to be eluding everyone.  I suspect my lung doctor is about to tell me that I am "out of shape."  Hrmph...I could have told him that!  I have been out of shape for years and could still breath and move around without grabbing for something to hold me up!

My heart appears to be in good working order, too. is good to know my organs are working, but at the same time it is so discouraging.  Have you ever experienced anything similar?  I am not a very patient patient and I want answers.  I want to be fixed.

Bless my friends and family.  They are so supportive and protective of me.  My daughter rushed here from Utah when it looked like I might need heart surgery.  She stayed a week and was a terrific help.  Thank God the mass in my heart turned out to be nothing to worry about, but it was so nice to have her here.  And, my sons were as close as the phone! 

I am still feeling weak and may not be posting much until I get some of my energy back.  So, please don't give up on me...I'll be back with humor and hints and observations before you know it!  I appreciate the prayers and well wishes from you, too!  (You know who you are!)  Your support means the world to me.

Uh-oh...I hear my pillow calling.  Take care my friends and have a wonderful rest of your week!
